How to Be Cool

You serve ice cream for breakfast. I'm serious. But before you think I am totally weird let me tell you a little bit about this ice cream.

Well, I guess first I should tell you how I found the recipe. I heart Stumble Upon! You simply sign up and input your likes: food/recipes, travel, kids activities etc. and then you hit stumble and it takes you to random websites that match you interests. You click thumbs up or thumbs down and it uses that info to predict even more interesting sites to you.

Lest you think I have extra time...I have this as an app on my phone and use it in those odd minutes when one is waiting in line, etc.

So, I stumbled upon...Use Real Butter blog and it had a single ingredient ice cream posted. I followed the directions with a few modifications...

Slice four bananas and freeze the slices for one hour. I then placed them in my blender and hit different buttons...I need a food processer. When the bananas were all mushed up I added a teeny bit of milk, two tablespoons of peanut butter and a squirt of chocholate sauce. I pushed a few more buttuns and seriously it was the consistency of ice cream!

I served it for breakfast. I was cool. The end.

Cheddar Meatloaf

Some friends and I were talking about meatloaf and how gross most of them are. I was able to say that I love my meatloaf! Again, this recipe comes from my mother and I have no idea where it came from to give proper credit.

Ingredients:
1 1/2 pounds ground beef or turkey
1 1/4 cups dry bread crumbs (seasoned if desired)
1 cup shredded sharp cheddar cheese
1 can condensed tomato soup
1 egg
1/4 cup chopped onion
2 tsps chopped parsley (you can use dehydrated equivelants of the last two ingredients)
1/2 tsp salt
dash of pepper
BBQ sauce (optional)

Directions:
Combine all ingredients, mix lightly. Shape into loaf in 12" x 17" baking dish. Bake at 350 degrees for 30 minutes. Pour BBQ sauce over top of loaf. Bake for 30 minutes longer.

I have to admit, my siblings and I were weird when we were younger. We didn't like BBQ sauce. Mom put ketchup on our part.

So, in closing, give meatloaf a chance. You will love this one! Let me know what you think!

Chocolate Chip Cheeseball

I made this for a couples baby shower last weekend. Everyone loved it so I thought I would share. I got this recipe from my mom. I have no idea where she got it. So, I cannot give credit where credit is due.

Ingredients:
1 8 oz. package cream cheese softened in the weather we have been having lately...it is soft enough just from the journey home...but I do live 30 minutes from the grocery store
1/2 cup butter (no substitutes---now you know it will be good) softened
1/4 tsp vanilla extract
3/4 cup confetioners sugar
2 tbsps brown sugar
3/4 cups miniature semisweet chocolate chips
3/4 cups finely chopped pecans
graham crackers

Directions:
In a mixing bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars, beat until just combined. Stir in chocolate chips, cover and refrigerate for 2 hours. Place cream chees mixture on a large piece of plastic wrap; shape into a ball. Refrigerate at least 1 hour. Just before serving, roll cheese ball in pecans. Serve with graham crackers.

I must apologize. You will love me. You will hate me. Make sure you have people over so you don't eat it all by yourself...unless you want to.
