It was our way to help support them but also keep the house in the family. It is, after all, where we got married.

So, my parents have been overseas for eight years and a lot of things have changed. Patti went into the army, got out of the army, got married, moved to Boston and moved to NJ in that time. Roo moved back to the states when he turned 18, entered the USMC, got married to Annie and bought a house in AR. Miki moved back here at 18 and has been living with us while working. And Chris and I? Chris was a police officer, then a sheriffs deputy and now is rocking an awesome job at FedEx. (Well and in there a funeral director and carpet cleaner). He just finished his B.S. in Christian Studies! I have been a kindergarten teacher, a seventh grade teacher, and a sixth grade teacher. I have finished my M.S. in Science Education K-8, my Ed.S. in Educational Leadership and my Ed.D. in Educational Leadership. And our biggest "accomplishment"? We have had two babies! Lorelei, 4, and Boaz, 13 months. So, anyway, a lot has happened for our family in the last eight years. And this is just the kid side of things, I'm not even going to get into all that Mom and Dad have done in the last eight years!

So, when Chris and I knew that Mom and Dad were getting released by the Lord to be able to return home (by faith---they don't have a job lined up yet) we decided to casually start looking at houses. We found a foreclosed property that we thought we might be interested and contacted our bank. If you work through realtors certified by USAA you get a gift card after you buy or sell based on how much the house was sold for. So, we got connected with a realtor who talked us out of the original property and said he would take us on Saturday to look at four houses. He sent the emails with the pictures you could click through. We didn't hate any of them. (Isn't that nice of me?) So, on Saturday we meet at the first house. Big thumbs down for me. The realtor said that the owners of one of the houses we were supposed to look at said it wasn't a good day to look so we headed to the next of two more houses.

We pull into a cove and we were like, "Yes! We always look in the windows of that house and now we get to see inside!" And then the realtor pulled into the driveway across the street from the house we were talking about. And I said, "I've never even seen that house before." We go inside and realize this is not a house that he had sent us on the email. He looks it up and we were supposed to be going in the house across the street that Chris and I had looked in the windows. His GPS had taken us to the wrong house! GPS? Divine intervention. We said, we like this house...how much? Yeah people, foreclosure, move in condition. Bank just painted the whole house and re-carpeted.

So, that was a Saturday. We got in touch with my parents the next day to make sure everyone was on board...we couldn't afford to buy and continue paying rent and wanted to make sure we were not leaving them in a bind. So, Sunday we got the go ahead from my parents and got pre-qualified. Monday we made our official offer. $5,000 under foreclosed asking price. When we made the offer no one else had made one. That night was date night for Chris and I. We found out that night that someone else had made an offer. We had until 5 pm the next day to submit our very best offer. We then found out that the house had shown 10 times on Saturday! I had a lot of ideas and things I wanted to say about how much I thought we should offer but I kept feeling God say for me to be submissive to Chris and let him make the decision. (I have to be careful because I know I can persuade Chris to do things my way) The next morning he said we would offer $5,000 over the asking price. We lost the house. The other buyers backed out at midnight and our realtor got the bank to consider our first offer rather than our best offer and they countered so we bought the house for $2500 less than the original foreclosed asking price.

That was a super hard paragraph to write, giving God glory in how He worked out the details and not using poor taste in talking about money everywhere! Y'all know I usually err on the rude side and do discuss money. It's a reality we all have to deal with. God is good, He promises to take care of all of our needs and He keeps His promises.

So, we closed on February 13th. When we finished signing all of the papers I pushed Chris (not hard!) and told him to run. I felt like they might take the house away, that they made a mistake. Isn't that dorky? I was just so excited!

So...then we could start moving in but not really. What that means is we couldn't move in until my parents were back or very close to it. This sounds wonderful because there was not a weekend where everything must be over there at one time...however after three months there comes a point where you just want everything in the same place. We painted Lorelei's room, Boaz's room and our room. We might paint more later. We are not in a rush. Everything is freshly painted.

And while there was not much work to be done on the inside, the outside...well much work is needed for the yard and landscaping. It will come with time.

And truly God is so good to us!

1. I like my 30's better than my 20's. I am just so much more sure of who I am, what my purpose is etc.

2. I love my husband more than I did the day I married him. It is going to be fun to grow old together. This might seem like...duh. But seriously, I am blessed. And I'm not the mushy type here people.

3. Being a mom is way harder than I ever imagined it would be.

4. I am thankful to be done with school.

5. I am thankful for the internet. You can find anything on it. An article about how to hang curtains in an arched window, how many patterns can you mix, how to make a meal with an odd assortment of ingredients, etc.

6. I don't do spontaneous very well with two little ones.

7. I'm not going to graduation. It makes my heart sad but I wasn't going to have anyone watch me get hooded so it just didn't seem to be worth it.

8. I like to glop on lots of paint and moosh it around until it is the way I like it.

9. I live for color. I seriously wonder if my house is gonna start looking like Candyland soon.

10. I like straight lines. In other words: if a piece of furniture is caddy corner...I find that totally hard to deal with.

11. If I were to go on a vacation to a different country I would want to settle in. Still see the sights but not change hotels. I like to unpack my bags and use the dresser drawers.

12. I rarely make the same meal twice. I always ask Chris if I should make something again. This is really my gauge to see if he really liked something or not. I just feel like there is so much good food out there that I want to try it all.

13. I adore texting. I only enjoy talking on the phone when by myself. Or driving because I know my kids are strapped in and I won't find them doing something crazy scary.

14. I am a major perfectionist. As in I have been working on this post for absolute months until I can come up with 33 things! As in I will have no dresser rather than the "wrong" dresser.

15. Netflix and Amazon Prime are my BFFs. I love watching episodes in a row. It makes me feel more connected with the characters.

16. I love nursing my babies. I nursed Lorelei for 25 months and am 12 months in with Boaz.

17. I have a plain Jane washer and matching dryer. I had to be able to control water height because of cloth diapering.

18. I want more babies. Lots of them.

19. I like my clocks and especially alarm clocks set to real time. I don't like figuring out what time it really is.

20. I like to get up with the first alarm. No snooze for me.

21. I don't like making side dishes.

22. The beach soothes my soul. Mountains speak to me but not down deep like the beach.

23. At some point packing a house morphs into throwing junk in a box.

24. All I asked for for Mother's Day was a bath in the jacuzzi with no interruptions. Chris delivered. With chocolate and orchids.

25. My love language is Diet Coke (thanks Holly for stating that so succinctly) and chocolate. Sonic mixes them FYI.

26. I love hot weather.

27. Chris cuts our kids' nails. I'm skeered

28. When I'm old I want an RV. Ok I'd love one now but am assuming I will be old before I can afford it.

29. I love to decorate. I had no idea.

30. My dream car: a jeep grand wagoneer

31. Dessert is my favorite

32. I menu plan for twice a month.

33. I'm gonna start this for next year now so maybe I won't take three months to finish a blog post.
Life has been intense. I haven't had an extra minute to sit and blog even a blurb. I hope to have a minute to blog for real soon. I can say this: God has been working on me. It is well with my soul.

Alright...back to Boaz. Oh my heart! That kid! He melts my heart in a different way than Lorelei. She is whimsical and he is teddy-bear-ish. Both wonderful, but oh so different. I don't know his exact weight...but over 26 lbs.

I think I have forgotten to mention he walks. I say it that way because I will be at a friend's house and he walks over to them and they look at me and say, "When did this happen?!?" Don't worry...I felt the same way too.

Boaz loves stairs. To go both up and down. Repeatedly. And he has fallen down a flight. It didn't scare him. I didn't let it scare me. (Too much)

He is a climber. Like turn the dining room chair over to climb the legs and get stuck until someone comes to rescue him.

Boaz's new words: hot and zipper.

When the iPhones updated their OS everyone had the option of letting people know when they had read the message. At first I declined because I thought, "Oh no...then people will know I have read their message and just haven't responded!"

When Chris updated his phone he accepted read receipts. I came to enjoy knowing if/when he had read my messages. And then...you might find this funny but the Lord started dealing with my heart about the goofy read receipts.

I am not telling you all of this to try and convince you to enable read receipts on your phone...I'm just telling you why I did.

The Lord has been working on my heart about being a good friend. About taking friendships to the next level. Not backing off when things get messy and to really dig deep. I know my friends need to be able to count on me. So...it shouldn't hurt me to show them that I have read their message. It will hold me accountable to respond. And guess what? They know life is crazy and I might be able to read their message but not respond for a couple of minutes, or even hours.

Another benefit, at least with Chris is if I see that he has read but not responded it gives me an opportunity to reword to elicit a response.

So, I'm curious...why or why not regarding read receipts? I only have three people in my life that have enabled read receipts so I know it is not the popular choice.
Boaz...hmm well in the last month he had an ear infection, had a visit from Aunt Patti and Uncle Mike and another visit from his Sassy, Poppy, Aunt Joy and Uncle Ben. He also had his first dentist visit.

Boaz has seven teeth and is 25 lbs 7 oz. He has added a few more words to his vocabulary: more (saw that one coming), bite, and eye.

And wow...the fits have begun.
I was able to review a beautiful orange argyle diaper! I loved the magnet that came packaged with the diaper that gave very specific prep as well as washing directions! Very helpful!

The diaper has a wonderful fit, even for my big guy!
The Knotty Babe is one of the sponsors for this event. I was happy to review an organic beanie and leg warmer set. They fit my hefty 9 month old as well as my teeny three and three quarter year old. I especially loved the leg warmers as I didn't feel like the edges squeezed legs too tight if that makes sense.

You can find The Knotty Babe on both Facebook as well as Etsy You will love the choices in organic material! Also, if you have an idea of something that you don't see, custom orders are welcome!

I was also sent a Fred plush toy and Boaz LOVES it! I love that it matches Boaz's bedding! It is super soft and snuggly and has a rattle inside! Super cute and unique baby gift! That is my favorite kind! I will definitely be ordering from The Knotty Babe in the future for shower gifts!
Maybe as a one word resolution? My resolution post will come later. But I will give you my word.

Intentional

I noticed this word kept popping up more and more in my prayer requests texts with a BFF. And truly it is the desire of my heart!

I desire to be intentional with my walk with the Lord. This means setting my alarm when I start to not listen to my internal 5 am alarm. This means making the decision to still get up and to plan to get up even when the kids have been up several times in the night. Because the days I don't get up early to spend time with the Lord... 9 times out of 10 I decided the night before...and then spend the rest of the next day that is just off irritated with myself for the decision.

I desire to be intentional with my husband. This having little kids in the house is not for the fainthearted. They will make you tired. And sick. You can't hide from them. And if you aren't careful you could forget to pay attention to and spend time with the one you love. I want to be intentional with packing Chris' lunch each night and maybe even slip in a love note or two. I want to be intentional with showing him love in the way I lay out his tshirt, underwear, and socks each night for work. One of Chris' Christmas presents was a year of preplanned dates (one each month). January is Date Night at the gun range.

I desire to be intentional with my children. This means having a plan. It means being present. It means being patient.

So, what is your word for 2013?

I also love friends. So...one of my BFFs decided to throw a Noon Year's Eve party for our kiddos and I got to help! I didn't help much because she was on a roll!

The idea of the party was to celebrate New Year's with our kids but not in the middle of the night. :) Everyone (this mama included!) is better in the middle of the day rather than the middle of the night!

Tasha took all of these pictures! She is awesome with pictures and tagging! (I asked permission to use!)
He has three teeth that are out and two that you can see the edges of. Boaz is known for his huge grin. He is all over the place. A full time cruiser and part time stander. He doesn't crawl on all fours anymore but uses what Chris calls a turbo leg to help him go even faster.

Boaz will give you bites of whatever he is eating when you ask and loves to clap. He will come when called sometimes. He unscrews everything. Knobs, lids, you name it.

Boaz is 24 lbs 6 oz. That is right people, he lost two ounces. I told you he has been all over the place.
I planned the nice Christmas Eve dinner and birthday party for Jesus. Had to rearrange the schedule as Miki had to work later than usual.

So, this is what went down. Lorelei and I went and picked Grandma up from her apartment. We brought her home and I worked on finishing dinner preparations. I got Grandma and Lorelei started on the gingerbread nativity. That was funny because Grandma wanted to do it like the picture ---as a fellow rule follower I understand--and of course Lorelei is a bit more...freespirited (?) and had other design ideas. My grandma is so sweet but you could tell it was hard for her to deal with Lorelei wanting to mess with her design. I got video of my grandma and my daughter. If I had any idea of how to get it off of my phone and onto here I would. There IS a clip on Facebook if you want to see.

Well, then Miki texts and says that she is finally coming home but she wasn't feeling well and to just eat without her. And then I look over and see that Chris is asleep. I had one moment when I wanted to cry. But then I just went with it and had dinner with my grandma and two kids who were super hungry with dinner being two hours later than normal.

Lorelei chose what gifts to give with the token she earned for her gift to the King. Sweetest moment was when she said, "I want to order one of everyfing." She ended up being able to order food for a mommy and baby for one month as well as a Christmas gift for a mommy and baby.

Christmas began leisurely with Lorelei getting up a little after 9 and gracing us with her presence at 9:15-9:30. Chris read the Christmas story while Lorelei and I acted it out. It got funny when she started driving Jesus in the car to take Him to the temple.

Then we opened presents and played for the rest of the day.

And I ended the day trying to convince Lorelei that she never had an older brother. She was in her bed crying about him and that he had died when she was a baby. Lie to me and tell me that is normal.
We can give because Christ gave to us. When giving gifts to our neighbors and community helpers (think mail man, UPS, Fed Ex etc.) I wanted to find something that Lorelei could be involved in. I know we could bake but sometimes don't you just want to get out of the box? I truly feel I spend a lot of time in the kitchen with cooking Real Food/Paleo for my family. I don't mind...but...

So, a friend posted this link with super sweet gift tags for making birdseed ornaments as gifts. I used the idea and gift tags but needed another "recipe" for the ornaments because I didn't have unflavored gelatin in the house and when the grocery store (ok there is one that is about 10 minutes away but I always feel as if I need a shower afterwards) is half an hour away and you have two kids...one snotty and coughy and one that um...has a lot to say...you find alternative means when possible.

So, I found this recipe that used nuts, birdseed, and coconut oil. This I could do. And Lorelei could do. So, we did.
It happens when your oldest is a toddler one year and a preschooler the next!

This year we are having my grandmother over for Christmas Eve dinner. We will have ham (in the crock pot with date sugar), paleo sweet potato casserole, and paleo broccoli casserole (same recipe as Thanksgiving because it is THAT good). And my grandma's deviled eggs.

But dessert will NOT be paleo. We will be having a birthday cake for Jesus. You can read all about it here It has different colors for each layer and each color has a specific meaning, even the frosting and single candle. Definitely go read about it.

We will also be making "gingerbread" nativities. Go read about them here.

We will be playing pin the star above the manger.

Won't my grandma have fun?

Christmas Eve will be the night that we count Lorelei's tokens and see what she can buy for a village as her gift for the King.

I will update with pictures after the actual event.

Anonymoushttp://www.blogger.com/profile/10881500820646621844noreply@blogger.com1tag:blogger.com,1999:blog-16234878.post-90389738475712556342012-12-18T17:17:00.001-06:002012-12-18T17:17:25.804-06:00Preschool partyLorelei had a Christmas party at her preschool. I made cupcakes. It was hard. (This is an exciting post already) It was hard because they are a nut free preschool. So no almond flour. Then I was confused on if they would consider coconut flour part of the nut family.

So then I bought regular white cake mix. Then I scoured the Internet to see how to make it better. I think to make myself feel better. I added sugar, flour, sour cream and maybe felt a little worse.

I found my inspiration on Pinterest. My outcome looks similar to original. Check out my pins under Christmas Party to check out. (I would link but I'm nursing the baby and blogging from my phone)

I have since found natural food coloring that I will be purchasing for the future.

<div class="separator"style="clear: both; text-align: center;">

<div class="separator"style="clear: both; text-align: center;">

<div class="separator"style="clear: both; text-align: center;">
Anonymoushttp://www.blogger.com/profile/10881500820646621844noreply@blogger.com2tag:blogger.com,1999:blog-16234878.post-34256070745755138982012-12-17T06:12:00.000-06:002012-12-17T06:12:58.557-06:00Christmas Tradition 7: Three GiftsWith March babies the first Christmas seems almost like a trial run. A eight month old. Both have been walking or on the brink of walking at this age and love all to do with Christmas! Peeking in the oven while something is baking...checking out the nativity etc.

I realized on Lorelei's first Christmas that things could easily get out of hand. She is the first (and was only) grandchild for all three sets of grandparents. She still is the one and only granddaughter and Boaz the one and only grandson.

So, you see, the need for boundaries...especially when we want the focus to be on Christ the King not...when can we open OUR presents.

This is loosely tied to the gifts of the three wisemen. But this is what works for our family. One gift is for your heart. One gift is something practical (I loosely use the term need) and one gift is a want. I do this for Chris too.

So for example: For Boaz this year:
Spiritual: Little People Nativity set
"Need": CD player for room
Want: I'm thinking two seater wagon haven't gotten the go ahead from the hubs yet

For Lorelei:
Spiritual: Two Seeds Family Worship CDs
"Need": CD player for room
Want: I'm thinking bilibo Again, haven't gotten the go ahead yet.

For Chris: He never reads my blog...but as soon as I type it here this will be the ONE time he reads it unprompted. He does read it when I tell him...hey I wrote about you...you should read it...but then I have to tell him how to get here etc. But remember that Better than Butterflies post? Tears people, truly I love that man!
We have been enjoying it. You know, in between grabbing it away from Boaz. Although he has had croup for the last couple of days he has barely slowed down. And people...he danced the other and both Chris and I were there to see it.

Here is the blog where the idea of the Shepherd's Pouches can be found. Chris and I worked on this together. The basic idea is to have serving hearts and look for ways to serve and help others and this is how we give to the King.

So each time we see Lorelei doing something "nice" i.e. chores without grumbling, extra patience with her grabby brother, not throwing a fit when she normally would (like with clothes) she gets a token. It is really a penny. We are calling it a token though so that we have a little bit of wiggle room depending on how many tokens she gets.

On Christmas Eve we will look in her bag and count how many tokens. Then we will look in a catalog like "Compassion's Gift catalog" and pick out a chicken or goat or some other type thing to send to a village in need.
I have been brought to tears more than once while reading to Lorelei. Thanks to Pinterest I was able to find an advent reading plan using the Jesus Storybook Bible. You can see it on this blog
Truly good for the soul.

This year we have been enjoying Truth in the Tinsel. Click here to visit Truth in the Tinsel.

This is an advent activity study that take you and your preschooler/early elementary student thru the advent story with a fun ornament to make that helps solidify the lesson learned. Questions are asked to get your child to grasp the main point. In the study there are also links to additional activities.

We converted our Thankful Tree that we did in November to our Truth in the Tinsel Tree and I really cannot tell you of any sweeter sound than to hear your child speak Truth. For example: Lorelei is not a fan of the dark. We have been able to use the candle and sun ornaments that she has made as talking points that Jesus is with us and is the Light of the World. That He protects us and is with us.
I know this tradition won't last forever as I saw a friend make a comment on Facebook that her seven year old had told her he was too old to attend. But for now, I will revel in it.

Here are some facts about Alpine Village taken from their flyer they sent home:
My thoughts will be interspersed in italics

The first Alpine Village was held in December of 1997

All ten shops, the Village Chapel and Clock Tower were built by faithful and dedicated members of Trinity
Children walk through the Village Chapel and can choose an ornament to hang on the tree. There is also a place where they can write down a prayer request to have someone pray for later on.

Over the years, the Village buildings have been stored at members' homes and in various off-site warehouses. Currently it is stored in its own trailer at the church.
The gym is set up like a village with wooden buildings with different activities in each building. There are also three wisemen milling about in full costume one holding gold, one frankincense and one myrrh. They allow the children to see their gifts for the King. And smell them. This is so important for children and Lorelei and I have talked about it several times since Saturday.

Live trees and mulch were used from 1997-2008. Due to fire code restrictions, artificial trees and "snow" are now used.
Ok, this fake snow...plastic. The kids LOVE it! It is falling from the "sky" but is also all over the ground and they love to throw it in the air and at each other, etc.

Some of the early shops included a Music Box Shop, Puppet Shop, Snowflake Shop, Clock Shop, Clown Shop (with face painting), Stocking Shop and Snow Globe Shop.

Shops more recently used include: Candy, Reindeer Food, Gingerbread, Card, Candy Cane, Snowman, Ornament, Book, Candle, Angel, and Toy.
A variety of music has been used over the years in the village including choral groups, instrumental ensembles, harps, handbells, and of course the famous Alpine horns.

Approximately 120 people work in the Village during each session. It takes one week and 100+ volunteers to setup the Village and get it ready for guests. Follow the Sunday session the village is disassembled and packed away in time for recreation activities on Monday evening.

Tickets were first used in 2001 for crowd control purposes. On average, 400 children attend each session of the 6 sessions of Alpine Village with over 5,000 people visiting each year.
While Alpine Village is free, it is important to sign up for the tickets as soon as you see/hear it is open. It fills up extremely fast due to it being such a fun event for little ones!

The Village is Trinity's gift to the community-it is their way of sharing the love of Jesus Christ.

Truly, Alpine Village is a gift and the love of Jesus was shown. Can't wait until next year!
Some are old from when I was little (ask my daughter...that is OLD)and some are as new as just starting this year. I would love to hear a tradition you had either when you were growing up or that you implement in your home now or would like to in the future.

I kinda want to do a linky but you saw that my Thanksgiving leftover linky went over so well.

Well the first tradition is an oldie but a goodie...truly they all seem to get better as we share them with the next generation. We did this every year when I was growing up.

When we receive Christmas cards we place them in a basket on our dining room table. Each night when we sit down to dinner we choose one and pray for the family.

One of the joys of living with a three year old is that they are quite elephant like. They never forget. Anything. Lorelei has remembered to get a card each night even when I would forget otherwise.

There was a lull in receiving the first Christmas cards of the season to when a couple are received each day. Lorelei would chose to pray for a family again. One card she was particularly fond of praying for is one of my friends who has two sweet little girls. One of her daughters is Lorelei's age and apparently scooted away from her one time! That has been prayed about at dinner time three times! I heart it. Isn't that how we are to pray? Taking every little thing to our Father?

So, inquiring minds want to know... what do you do with your Christmas cards?

I have spent time finding books that are about the true meaning of Christmas.

As a side note. We don't do Santa Claus here. Chris struggled when he was younger and he found out about Santa, Easter Bunny, and the Tooth Fairy. He felt lied to. And he feels very strongly about telling the truth to our children. I do too but I must admit it took me a while to come around to not doing the Tooth Fairy as this is one of my most favorite memories of childhood.

I say all of this to say...if you are the random adult that asks my child about Santa, this is a typical response from Lorelei formulated on her own, "Oh that Christmas boy? He's not real." And then the adult looks at us like we are cray cray. So, bottom line...don't ask in front of your children if you do Santa at your house because Lorelei will burst that bubble fast.

Lorelei gets three books read to her each night because she is three years old. Since we have been getting a new book a night...I have made it just be Christmas stories after December 3rd (when she had three).

Here are some of the ones Lorelei has opened so far...

This one seems to be the favorite. The last two pages are the song. I sing it and both Lorelei and Boaz love it. And you know the bonus? Lorelei is starting to sing it with me now. I love it!

Ok, you can't really click to look inside unless you go to Amazon. And I'm sure I am missing some really great way of using an affiliate link but truly I am just sharing a new tradition we are starting.

Another one that Lorelei has asked me to read every night since she opened it.

Sweet and simple

:)

I love this one. A counting book from the animals' perspective.
We are so blessed to have him in our family! We are still going through growing pains here (adjusting to having two children) but for the most part things are good.

Boaz is pulling up, cruising, and standing on his own for a few brief seconds. He is the king of propping his booty on things so he can "stand." He says: mama, hey, hello, buhbye, and up.

He eats whatever we are eating but that is still not his main deal. He has three teeth.

He is 24 lbs 8 oz. I caught myself singing to him today, "I like big guts and I cannot lie." Then I thought that might not be self-esteem boosting. Or appropriate...plus I just couldn't figure out how to get out of the song.

I love him.

The end.

<div class="separator"style="clear: both; text-align: center;">
Anonymoushttp://www.blogger.com/profile/10881500820646621844noreply@blogger.com1tag:blogger.com,1999:blog-16234878.post-59854271285056986622012-11-23T06:44:00.000-06:002012-11-23T06:44:29.390-06:00Paleo Stuffing and Turkey Quiche: A Leftover Link UpOk, I want to know how you use up your Thanksgiving leftovers! I think this will be a super fun way for us to learn new recipes! All you do is post on your blog a recipe you made (or have made in the past) using Thanksgiving leftovers. I'll start.

Last night Chris was working so I knew it was just us girls at the house so I felt safe to try a quiche. I searched for a turkey quiche. I kept finding ideas of how to make it with leftover stuffing as well so then I had to work on Paleo-tizing it. Here is what I came up with:

Paleo Stuffing and Turkey Quiche

1. Place your leftover stuffing in the bottom of a pie tin. (Can use up to 2 1/2 cups-depending on how much press on bottom and up sides of pan) The stuffing acts as your crust. Place in oven at 400 for up to 10 minutes (less if you have less stuffing) I only had a little bit of stuffing left so I just put it on the bottom of the pie tin.

Filling ingredients:
1 1/2 cup almond milk
1 cup left over turkey (in small pieces)
pepper to taste
generous helping of dehydrated onions this is if you don't have the real deal left in your house
3 eggs

Mix all of the filling ingredients and pour in pan with stuffing.

Top with 1/2 Daiya cheese. Daiya is a dairy free vegan cheese.

Bake at 375 degrees for 45 minutes.

Yum!

Now, I want to hear about your leftover recipes!
