Paleo Stuffing and Turkey Quiche: A Leftover Link Up

Ok, I want to know how you use up your Thanksgiving leftovers!  I think this will be a super fun way for us to learn new recipes!  All you do is post on your blog a recipe you made (or have made in the past) using Thanksgiving leftovers.  I'll start.

Last night Chris was working so I knew it was just us girls at the house so I felt safe to try a quiche.  I searched for a turkey quiche.  I kept finding ideas of how to make it with leftover stuffing as well so then I had to work on Paleo-tizing it.  Here is what I came up with:

Paleo Stuffing and Turkey Quiche

1. Place your leftover stuffing in the bottom of a pie tin.  (Can use up to 2 1/2 cups-depending on how much press on bottom and up sides of pan) The stuffing acts as your crust.  Place in oven at 400 for up to 10 minutes (less if you have less stuffing)  I only had a little bit of stuffing left so I just put it on the bottom of the pie tin.  

 Filling ingredients:
1 1/2 cup almond milk
1 cup left over turkey (in small pieces)
pepper to taste
generous helping of dehydrated onions this is if you don't have the real deal left in your house
3 eggs

Mix all of the filling ingredients and pour in pan with stuffing.  

Top with 1/2 Daiya cheese.  Daiya is a dairy free vegan cheese.

Bake at 375 degrees for 45 minutes.

Yum!
